Getting Nutrition In LTC Facilities Right – Interview In Advance Of The Long-Term Care CXO Summit, 25-26 July, 2013, Florida
“In order to maintain their competitive edge, long-term care (LTC) facilities must be on the cutting-edge of nutrition,” says Staci Vetrovsky, Vice President, Nutrition Care Systems, Inc. “The younger population coming into LTC facilities expects upscale dining options and is more health-conscious than the previous generation,” she adds.
An attendee of the marcus evans Long-Term Care CXO Summit Fall 2013, in Palm Beach, Florida, July 25-26, Vetrovsky gives an overview of why nutritious food should be a priority at LTC facilities.
Why do LTC facilities need to focus more on nutrition?
As the younger population begins to enter LTC facilities, we are discovering they require more variety and healthy alternatives than generations past. As life expectancy in America continues to rise, so does the demand for higher quality of life – which includes dining choices. LTC facilities must step up their offerings to attract these residents.
How can an increased focus on nutrition impact the bottom line?
In LTC facilities, mealtime is often what residents look forward to the most. Knowing this, we help facilities provide food that is not only healthy, but that looks, smells and tastes delicious. We want residents and their families (and touring families) to easily see that nutrition matters in that facility. Healthy, attractive, great-tasting food will help attract residents of all ages.
We partner with our LTC clients to help them set and meet their goals, which may include growing their census or increasing revenue, all while maintaining a budget, of course. We look at their food cost, their menu offerings and their staffing. The answer is not always as simple as buying cheaper products but to optimize food production and reduce waste.
Simply put – aligning production with what residents prefer to eat keeps food costs down. There are other questions to ask when assessing production: Are we utilizing recipes? Do we offer proper serving sizes? Are we making good use of leftovers? The answer to these questions has a direct impact on efficiency and costs.
What is the latest regulatory news that LTC facilities must be aware of?
The big focus right now is on offering resident choice, reducing the need for supplements through better nutritional offerings and alternative methods of feeding. Of course, there are constant changes occurring, which is why having a trusted resource to help keep a LTC facility compliant is so critical.
How could facilities utilize technology to streamline processes?
Our clients are able to access their menus, plan production records and determine serving amounts (to minimize overproduction) via our cloud-based software. The immediacy of our cloud-based programs means we can quickly make adjustments, customize menus and provide an exceptional customer experience – all before breakfast.
